Arugula, Heart of Palm + Avocado Salad

I have been making variations of this for years. Technically it's two portions but I treated the recipe as a single portion yesterday and today.
It’s spicy, creamy and fresh. Eyeball the measurements- just throw them in there! You really can’t go wrong!

INGREDIENTS

1 each avocado
- 1 pinch Maldon
- 1 pinch cracked black pepper
- 1 pinch red pepper flakes
- 1-2 tablespoon hemp seeds
- 1 each lemon, juiced
- .5 tablespoon olive oil
- .25 teaspoon garlic purée (optional)
- 5 ounces arugula
- 1 cup heart of palm, crushed (about half of a 14oz can)
METHOD
- Thickly slice the avocado and add to a large mixing bowl. Top with Maldon, black pepper, red pepper flakes, hemp seeds and lemon juice, olive oil, and garlic. Mix well, until the avocado becomes slightly creamy, but is still chunky.
- Toss in arugula and heart of palm. Enjoy!
