INGREDIENTS

0.75 cup water

0.5 cup maple syrup
- 4.5 cups mixed berries, frozen
- 2 Tbsp. fruit liqueur Cointreau
- 2 pounds of lady fingers (4-6 packages)
- 4.5 cups fresh berries (sliced strawberries, blackberries, and blueberries)

0.25 cups maple syrup
- 4 each egg yolks

0.5 cup maple syrup
- 1 cup heavy cream
- 8 ounces mascarpone

METHOD
Berry Simple Syrup
For the berry simple syrup, heat frozen berries with maple syrup and water. Transfer the berries to a bowl and add a glug of Cointreau to the simple syrup.
Mixed Berry Layer
Mix fresh berries with maple syrup and macerate while you do the next step.
Mascarpone Cream
Whisk egg whites with maple until they are very pale yellow and triple their volume. Then, whisk heavy cream and maple syrup until they reach medium peaks, whisk in mascarpone, and gently fold in the sweetened eggs.
Assembly
To assemble, soak ladyfingers in the berry simple syrup and place them in an even layer on the bottom of a baking dish.
Layer with previously frozen berries, then the sweet mascarpone mixture.
Top with soaked lady fingers, the macerated fresh berries, and the remaining mascarpone cream.
Chill for at least four hours. Top with more berries before serving,
