Chocolate Chip Oatmeal Bars

These chocolate chip oatmeal bars are SO GOOD and easy to make. No refined sugars or gluten. You can eat them as is, cut into shapes, or use the recipe for a cookie crust!

INGREDIENTS
- 306g APF (I use Cup4Cup)
- 3g cinnamon
- 2 pinches salt
- 453g salted butter, melted
- 283g maple, room temp
- 87g coconut sugar
- 5g vanilla extract
- 2ea eggs, large, room temp
- 268g GF old fashioned oats
- 255g HU Baking Gems
- 1 handful pecans, chopped
- 1 handful walnuts, chopped
METHOD
- Mix the flour, cinnamon and salt in a small bowl
- Whisk together melted butter, maple, coconut sugar, vanilla extract and eggs
- Fold in the flour mixture
- Fold in oats, chocolate chips, and nuts
- Evenly spread the mixture onto a full sheet pan lined with parchment and freeze while you heat your oven to 350F
- Bake for 20ish minutes on the middle rack
- Let cool completely in the sheet pan before you slice into shapes
- This also makes a great crust!
