Chocolate Macadamia Fat Bombs

These fat bombs are made with carob powder, but cacao works as well!
What's Carob?
Carob has a "chocolatey" taste, but has zero caffeine. It’s high fat, high fiber, and low sugar. It can be subbed 1:1 for cacao powder, but is sweeter than cacao, and not as sweet as cocoa (it has a higher carb/sugar content than cacao, but less than cocoa). I tend to add less other natural sweeteners when I use carob!
This is a GREAT alternative for anyone sensitive to caffeine/sugar, or those who get tummy aches when eating chocolate/cocoa.
*omit the Mac topping for a healthier nut butter cup!

INGREDIENTS
- 1 cup coconut oil, melted

1 cup carob or cacao

.5 tablespoon maple
-
4 tablespoons nut butter (I used Organic NuttZo)

1 handful macadamia nuts, roughly chopped and sifted
METHOD
- Line a cupcake tin with 8 liners.
Whisk the melted coconut oil, carob, and maple together in a large measuring cup with a spout.
Pour the mixture into each liner, about a quarter of an inch high.
Refrigerate for about ten minutes.
Scoop half a tablespoon of nut butter into the middle of each cup, then top off with the remaining chocolate mixture.
Sprinkle the tops with the chopped macadamia nuts, and drizzle with any remaining chocolate mixture.
Store in the freezer or fridge!
