This is a great method to have in your back pocket, as you can switch up the herbs and type of cheese based on whatever you have in the fridge.
INGREDIENTS

4 each sweet potatoes

3 tablespoons melted ghee or olive oil

.25 cup fresh herbs (I used thyme, but rosemary, sage, etc. would work well)

1 tablespoon garlic paste

.33 cup grated parmesan
METHOD
Cut the sweet potatoes into 3/4” rounds or moons.
Combine the melted ghee, your favorite fresh herbs (I used thyme), garlic paste and s/p in a large bowl. Combine with the sweet potatoes.
Layer the sweet potatoes on a sheet pan in an even layer.
Bake at 425” for 30min. Flip, top with grated parm and bake or broil until the parm gets crispy.
