INGREDIENTS
Elderberry Syrup

5.5 cups water

1 cup organic elderberries

1.5 teaspoon cinnamon

.5 teaspoon cloves

1 cup raw local honey (365 grams)
Elderberry Gummies

.25 cup grassfed bovine gelatin

1 cup elderberry syrup
-
.5 cup warm water (around 110–120°F)
METHOD
Elderberry Syrup
Bring the water, elderberries, cinnamon and cloves to a boil then simmer for 30-minutes. Cool at room temp.
Mash the berries (I use an immersion blender), then pour through a cheesecloth and strainer.
Combine with honey and store in a glass container in the fridge
Elderberry Gummies
Whisk the gelatin with half of the elderberry syrup until smooth
Whisk in the warm water, then the rest of the syrup until everything’s smooth
Pour into molds and refrigerate until firm
Store in glass containers; freeze or refrigerate as needed
