INGREDIENTS

2 pounds tritip

salt and pepper

10 ounce jar Mina harissa, spicy

1 each preserved lemon, minced

1 tablespoon garlic puree

1 tablespoon olive oil
-
2 each yellow bell peppers, cut into strips

1 each cucumber, diced

1 each red onion, diced
-
.66 package mint, chopped
-
1 bunch mint, chopped

2 each jalapeños, minced
-
2 each limes, juiced

HARISSA STEAK TACOS
Season steak with salt.
In a Pyrex, whisk harissa, preserved lemon, garlic, olive oil, salt and pepper. Add tri-tip and marinate for at least six hours.
Remove steak from marinade. Cook on a preheated, very hot cast iron for 5-min per side.
Heat the marinade just until boiling. Set aside.
Season the yellow peppers with olive oil, salt and pepper. Broil until charred.
Add the steak to the oven and broil for 5-10 minutes, depending on your desired doneness. Let rest, then cut into smaller pieces for tacos. Mix with cooked marinade.
CUCUMBER MINT SALSA
Mix all ingredients in a large bowl. Check for salt and lime.
ASSEMBLY
Spread guacamole over heated tortillas.
Top with steak and peppers, then cucumber-mint salsa.
