Herbed White Fish

This is one of my favorite ways to prepare white fish and would amazing for Friday dinners during Lent! It’s super versatile- you can serve with a salad, grilled veggies, or make a pan sauce after!
Herbed Halibut (or other white fish)

INGREDIENTS

4 each halibut filets (or other white fish)

s/p

2-3 tablespoons of fresh herbs, chopped (I used thyme, but tarragon, dill, etc would work)

.5 cup your favorite flour (I used Cup4Cup)

2-3 tablespoons of olive oil

1 each lemon
METHOD
Dry the fish very well with paper towels and sprinkle both sides with salt and pepper
Press the fresh herbs into both sides of fish
Pour the flour into a shallow plate, then press both sides of the fish into the flour. It should be veryyyy lightly coated, as we are not making breaded and fried fish
Heat the oil in a cast ion over MH heat. Add the fish and cook for 2-3min, flip and cook for another 2-3min.
Squeeze with lemon and eat!
