Italian Sub Salad

The first is a very boyfriend approved Italian Sub Salad! Everything you love about an Italian Sub, but on a bed of greens instead of two buns. I grilled Western Daughter's hot and sweet sausages for this salad. Please check your labels when buying any protein, but especially sausages!
You’ll also see a recipe for my Very Basic Pickled Red Onions (love this recipe bc it’s quick and you can elevate it based on spices you probably already have) and my Italian Dressing. Dressing is SO EASY to make and the flavor is a thousand times better than jarred.

Italian Sub Salad

INGREDIENTS

1 each head of chopped romaine, per person
-
2 each sliced Italian sausages, per person
-
4 each Buf Ciliegine Mozzarella, per person
-
.5 each diced avocado
-
Handful sliced cherry tomatoes
-
Handful sliced sweet peppers
-
Handful pepperoncinis
-
Handful of my Quick Pickled Red Onions
-
Homemade Italian Dressing
-
.5 each red onion, julienned
-
Red wine vinegar
-
Boiling water
-
Himalayan salt and pepper
-
Optional: fennel seeds, mustard seeds, thyme, jalapeno, etc
-
.5 cup red wine vinegar
-
.5 tablespoon dijon mustard
-
1 teaspoon dried oregano
-
1 teaspoon garlic puree
-
a few pinches of Himalayan salt and pepper
-
1 cup EVOO

QUICK PICKLED RED ONIONS
ITALIAN DRESSING
METHOD
QUICK PICKLED RED ONIONS
Add onions to a glass container. Pour red wine vinegar .75 way up the height of onions. Pour boiling water to cover. Stir in spices. Let marinate for at least 45 minutes. Will last in the fridge for a few weeks.
ITALIAN DRESSING
Whisk everything together. Taste and adjust seasonings.
ITALIAN SUB SALAD
Toss all of the ingredients together and EAT!
