Macadamia Carob Cups

INGREDIENTS
- .5 cup coconut oil, melted, + 1-2 tablespoons more if needed
- .5 cup @chatfieldsbrand carob powder
- .5 teaspoon maple
- 1 pinch @maldonsalt
- 1 cup macadamia nuts, soaked in water overnight
METHOD
- Line a cupcake tin with liners
- Combine the melted coconut oil, carob, and maple in a small bowl
- Use a cookie scoop to portion the bottom layer of the cups
- Blend half the macadamia nuts in a Vitamix until totally smooth. Add a little water, as needed, and season with @maldonsalt. Add a scoop to the center of each cup
- Evenly pour the remaining hard shell
- Roughly chop the remaining Macadamia nuts and add to the top of the cups:Let sit at room temp for 20-min to harden, or stick in the fridge
- Enjoy.
