Mexican Shrimp, Peach, and Mango Cocktail

This take on shrimp cocktail is so fresh and SO GOOD.
This is a no recipe recipe, but I know you all can make it! To make it REALLY EASY on yourself, buy your salsas at your local Farmer’s Market or a tortilleria. They will be a thousand times better than any grocery store. If you can’t find peach or mango salsa there, buy one of their spicy chunky salsas and add diced peach and mango. I purchased my salsas from the @esmeraldastamalehouse stand at the Highland Farmer’s Market in Denver. Let me know if you try this no recipe recipe or if you have any questions at all!

Mexican Shrimp, Peach and Mango Cocktail

INGREDIENTS

2 pounds shrimp, cleaned and cut into quarters (about 8 per person)

Himalayan salt to taste

6-8 limes, juiced + zested (enough juice to cover shrimp)

2 pints chunky spicy salsa

1 each mango, chopped
-
1-2 each peaches, chopped
-
1 each seedless cucumber, chopped

1 bunch cilantro
-
1 each avocado, diced
METHOD
Sprinkle a little salt over the raw shrimp and squeeze enough lime juice to cover the shrimp. Toss. Marinate in the fridge for about 30-minutes.
Combine the salsa, mango, peaches, cucumber, and cilantro.
Add the shrimp, toss, and enough of the shrimp-lime juice to taste.
When ready to serve, add the avocado. Serve with chips!
Recipe Note
If you have access to peach or mango salsa, you can use one pint of each instead of the chunky salsa, mangos and peaches.
