Ingredients

12 ounces cranberries, fresh

100 grams walnuts
-
100 grams coconut sugar

1 tablespoon orange zest
-
1 box Simple Mills vanilla cake mix

1 tablespoon orange zest

3 each eggs (or 3T flax + 9T water)

⅓ cup avocado oil
-
⅓ cup water
-
1 teaspoon orange blossom water

1 teaspoon almond extract
Directions
- Step 1
Slice the cranberries in half, then combine with walnuts, coconut sugar and orange zest. Transfer to the bottom of a springform pan in an even layer.
Step 2
Pour the Simple Mills vanilla cake mix into a large bowl. Whisk in the orange zest. This will ensure the zest doesn’t clump.
Step 3
Whisk eggs, oil, water, orange blossom water and almond extract. Combine with the vanilla cake mix, then pour over the cranberry-walnut mixture.
Step 4
Sprinkle the top with coconut sugar and bake at 325F for 45-minutes. You may want to place the springform pan on a sheet pan, in case the contents ooze out.
Step 5
Let cool completely before inverting the cake and slicing.
Step 6
This would be delicious with bourbon whipped cream or vanilla ice cream!
