My recipe for "Roasted Veggies, Feta, Preserved Lemon, Basil Orzo + Grilled Shrimp" is an easy and super flavorful weeknight dinner. Everything gets roasted on sheet pans, then mixed together in thirty minutes. Omit the shrimp if you are vegetarian!

INGREDIENTS

1 pound broccoli florets, torn into smaller pieces

12 ounces cherry tomatoes, halved

.5 each red onion, cut into 1/2" strips

1 each lemon, sliced very thinly into rounds with a mandoline

2 tablespoons olive oil

red pepper flakes
-
8 ounces feta block
-
12 ounces orzo, cooked
-
.5 each preserved lemon, finely chopped

1 cup basil
-
2 pounds grilled fish (I used shrimp)
METHOD
Toss veggies and lemon rounds with half the olive oil, salt, pepper and red pepper flakes. Spread onto two baking sheets with feta placed in the center. Roast at 475F for 15-20 minutes, or until the veggies are browned.
Toss the cooked orzo with the remaining half of olive oil, preserved lemon, basil, and more salt/pepper/red pepper flakes.
Top with veggies and shrimp and eat!
**You can also cook the fish with the veggies but I like the taste of grilled fish better!
