Siete Wraps w/ Prosciutto, Roasted Chicken, DF Pesto, Hot Honey Almonds, Balsamic Tomatoes + Greens

This is essentially three recipes, which is annoying but trust me - they are so unbelievably easy. You'll make my DF pesto, hot honey almonds, balsamic tomatoes, and one for the whole wrap. You don’t have to make all three, but I highly recommend you do to get similar results. These recipes are super versatile, QUICK, and just really great recipes to have up your sleeve.
For this dairy free pesto I used broccolini and broccoli rabe stems. Did you know you could do that?! Did you know they are delicious?! You can use any leftover greens or herbs to make pesto. I love using WHOLE plants, so I will often use parts of the plant that most people throw away: carrot or beet tops, rainbow chard stems, any roots, leaves, etc. These are all edible and have so many nutrients!
The hot honey almonds and balsamic tomatoes are ridiculously easy to whip up, are full of flavor, and great to keep on hand as they add something special to any seemingly boring dish.

INGREDIENTS

2 each Siete burrito sized tortillas
-
1 cup of my Dairy Free Mint Pesto
-
4 each strips of prosciutto
-
4 each handful of rotisserie chicken, shredded and chopped (or 2 each chicken breasts, grilled then shredded)

.5 cups Hot Honey Almonds
-
1 cup Cherry Tomatoes in Balsamic
-
5 ounces mixed greens
-
1.5 cups almonds, roughly chopped in a food processor

4 tablespoons Honey
-
1 tablespoon Maldon
-
2 teaspoons Red pepper flakes
-
1 cup cherry tomatoes, quartered

Balsamic vinegar to cover

METHOD
Hot Honey Almonds
Toast the chopped almonds and immediately toss with honey and Maldon. The almonds will clump as they cool.
Balsamic Tomatoes
Toss the tomatoes with the balsamic vinegar and let marinate for 10-minutes.
Assembly
Warm Siete tortillas for 45-seconds per side on a pre-heated cast iron, covered.
Spread half a cup of pesto on each tortilla.
Add two strips of prosciutto on each tortilla, then top with roasted chicken.
Sprinkle the hot honey almonds in a straight line in center of the tortilla, then do the same with the tomatoes.
Top with the greens and wrap like a burrito. I like to wrap the finished product in a sheet of foil paper to keep things clean while eating.
