Make pico de gallo this weekend!! This recipe is a crowd portion and pretty spicy You can always reduce the serrano amount if you prefer something a little more mild. I also love using a mix of heirloom cherry tomatoes - the color variation is pretty gorgeous. Regardless of the type of tomatoes you use, make sure you chop them into similar sizes.

INGREDIENTS

2 pounds cherry tomatoes, halved or quartered

Himalayan salt, to taste
-
2 each serranos, seeds removed and finely diced
-
.75 cup white onion, finely diced
-
1 bunch cilantro, stems removed and roughly chopped

1 each lime, juiced
METHOD
Add tomatoes to a colander and toss with salt. Let drain for 30 minutes. Combine all of the ingredients, adjust seasoning and eat!
